Tagliatelle with Minted Pea Sauce
Made with only a handful of ingredients, our quick tagliatelle with minted pea sauce is the perfect midweek meal.

Ingredients
- 350g dried tagliatelle
- 300g (2 cups) frozen peas
- 40g (1/2 cup) shredded parmesan, plus extra, to serve
- 125ml (1/2 cup) crème fraîche
- 2 tablespoons fresh mint leaves, plus extra, to serve
- 2 garlic cloves, chopped
- 1 lemon, rind finely grated
Instructions
- Bring a large saucepan of salted water to the boil over high heat. Cook peas for 2 minutes or until tender. Use a slotted spoon to transfer to a bowl. Place 13⁄4 cups of the peas in a food processor. Add garlic, rind and mint. Process to a coarse paste. Add crème fraîche and parmesan. Season with pepper and process until smooth.
- Meanwhile, add pasta to pan of boiling water. Cook, following packet directions, until al dente. Drain and return to the pan.
- Add pea mixture to pasta and toss to combine. Season. Stir in remaining peas. Serve sprinkled with the extra parmesan and mint.
Notes
Make the pea mixture up to 1 day ahead and store in an airtight container in the fridge. Return to room temperature and add a splash of pasta cooking water to loosen before tossing with pasta.
