Tagliatelle with Minted Pea Sauce

Made with only a handful of ingredients, our quick tagliatelle with minted pea sauce is the perfect midweek meal.

Ingredients

  • 350g dried tagliatelle
  • 300g (2 cups) frozen peas
  • 40g (1/2 cup) shredded parmesan, plus extra, to serve
  • 125ml (1/2 cup) crème fraîche
  • 2 tablespoons fresh mint leaves, plus extra, to serve
  • 2 garlic cloves, chopped
  • 1 lemon, rind finely grated

Instructions

    1. Bring a large saucepan of salted water to the boil over high heat. Cook peas for 2 minutes or until tender. Use a slotted spoon to transfer to a bowl. Place 13⁄4 cups of the peas in a food processor. Add garlic, rind and mint. Process to a coarse paste. Add crème fraîche and parmesan. Season with pepper and process until smooth.
    2. Meanwhile, add pasta to pan of boiling water. Cook, following packet directions, until al dente. Drain and return to the pan.
    3. Add pea mixture to pasta and toss to combine. Season. Stir in remaining peas. Serve sprinkled with the extra parmesan and mint.

Notes

Make the pea mixture up to 1 day ahead and store in an airtight container in the fridge. Return to room temperature and add a splash of pasta cooking water to loosen before tossing with pasta.
