Easiest Beef Meatloaf

With one bowl, minimal ingredients, and five minutes of prep time, this meatloaf is as easy as it is delicious.

  • nonstick cooking spray
  • 1 pound lean ground beef
  • 1/2 onion (medium, finely diced)
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2/3 cup plain breadcrumbs
  • 1/2 cup milk
  • 1/3 cup ketchup (for meatloaf)
  • 1/4 cup ketchup (for topping)


Preheat oven to 375°F. Spray an 8x4-inch loaf pan with nonstick cooking spray.

Mix together beef, diced onion, salt, pepper, breadcrumbs, milk, and ketchup in a large bowl until thoroughly combined. Transfer mixture to prepared loaf pan.

Bake the meatloaf for 40 minutes on the middle rack of oven.

Open oven and spoon ketchup in an even layer over the top of meatloaf. Bake for 15-20 minutes longer, until center of loaf reaches 160°F.

Check to see that meatloaf is done. Remove from oven or add time as needed.
Allow meatloaf to rest for 10-15 minutes before serving.
