Crispy Chickpea and Semi-Dried Tomato Pasta

Ingredients

  • 400g can chickpeas, rinsed, drained well (see notes)
  • 375g dried large spiral pasta
  • 270g jar semi-dried tomatoes in oil
  • 60g baby spinach
  • 2 garlic cloves, thinly sliced
  • 1 red onion, cut into thin wedges
  • 1/2 cup fresh basil leaves
  • 1/4 cup shaved parmesan
  • 1/2 teaspoon dried chilli flakes

Instructions

    1. Place chickpeas on a tray lined with paper towel. Pat dry. Drain tomatoes, reserving oil.
    2. Cook pasta following packet directions. Drain, reserving 1/3 cup cooking liquid.

Notes

Cook’s notes: You can use cannellini beans or butter beans instead ofchickpeas for a slightly different flavour.
