Crispy Chickpea and Semi-Dried Tomato Pasta

Ingredients
- 400g can chickpeas, rinsed, drained well (see notes)
- 375g dried large spiral pasta
- 270g jar semi-dried tomatoes in oil
- 60g baby spinach
- 2 garlic cloves, thinly sliced
- 1 red onion, cut into thin wedges
- 1/2 cup fresh basil leaves
- 1/4 cup shaved parmesan
- 1/2 teaspoon dried chilli flakes
Instructions
- Place chickpeas on a tray lined with paper towel. Pat dry. Drain tomatoes, reserving oil.
- Cook pasta following packet directions. Drain, reserving 1/3 cup cooking liquid.
Notes
Cook’s notes: You can use cannellini beans or butter beans instead ofchickpeas for a slightly different flavour.
