Pork meatballs with the tang of sweet and sour sauce!

Pork meatballs have always been a fan favorite among people young and old. Who wouldn't love this lovely bite-sized densely flavored food? It can satisfy all cravings whether taken as a snack or a meal.

In this recipe, we gave a new twist on cooking meatballs by giving it a savory sweet and sour sauce. Bringing in a nice tangy dish for the family to feast on.

Ingredients

  • 2 slices bread, crusts removed
  • 500g pork mince
  • 2cm piece ginger, peeled, finely grated
  • 2 teaspoons cornflour
  • 3 tablespoons soy sauce
  • 1 brown onion, coarsely chopped
  • 1 red capsium, deseeded, coarsely chopped
  • 1 green capsium, deseeded, coarsely chopped
  • 3 green shallots, finely chopped
  • 2 garlic cloves, crushed
  • 1 egg
  • 2 tablespoons peanut oil
  • 227g can pineapple chunks in juice
  • 60ml (1/4 cup) milk
  • 125ml (1/2 cup) tomato sauce
  • 60ml (1/4 cup) rice wine vinegar
  • 1 tablespoon caster sugar
  • Steamed brown rice, to serve
  • Fresh coriander leaves, to serve (optional)
  • Bean sprouts, to serve (optional)

Instructions

  1. Place the bread inside the bowl and pour the milk. Set aside for 2 minutes to let it soak. Then, squeeze out the milk and place the bread in a larger bowl.
  2. Add the minced pork, shallot, ginger, garlic, cornflour, egg, and 1 tablespoon soy sauce into the bread mixture. Use your hands to mix gently to combine. Season the dish. Roll tablespoons of the mixture into balls. Then, transfer to a plate.
  3. Heat the remaining 1 tablespoon oil in the pan over medium-high heat. Add the onion and capsicum and cook them together, stir for 3-4 minutes, or until slightly softened. Reduce the heat to low.
  4. Add the pineapple juice from the can, tomato sauce, vinegar, sugar, and the meatballs. Cook and stir for 4-5 minutes or until the meatballs are cooked through and the sauce thickens.
  5. Divide rice among serving bowls. Top it with meatballs and sauce. Scatter over coriander and bean sprouts, if you like.
