    Instructions
    1. Soak raw unsalted cashews for a minimum of 30 minutes. Drain well.
    2. Blend ingredients in a blender, EXCEPT 1/2 the fresh mint leaves and cacao nibs, until very well blended.
    3. Add the rest of the fresh mint leaves and cacao nibs and pulse a few times just to combine.
    4. Transfer the batter to a bowl, cover it and refrigerate 1-8 hours or freeze for 45 minutes, until well chilled.
    5. When batter is well chilled, pull out the ice cream canister from the freezer and empty batter into canister.
    6. Process according to what your individual ice cream maker suggests, usually about 10 minutes or until thick and creamy.
    7. Serve immediately or freeze for later. If frozen, thaw at room temperature for 10 - 15 minutes.
    8. Enjoy!
