    The fruit
    1. Set dates, walnuts and baking soda aside.
    2. Add remaining ingredients to a saucepan and simmer over a very gentle heat for 15 minutes.
    3. Take off the heat and stir in the baking soda.
    4. Set aside.
    The dough
    1. Preheat your oven to 160C / 320F. (The original recipe calls for 180C but I found this to be too high.)
    2. Mix the flour and spices. (I substituted spelt flour adding two teaspoons of soda bi-carb per cup for self-raising.)
    3. Add the eggs then the fruit, dates, walnut pieces and any remaining liquid. Stir well with a wooden spoon.
    4. Place in a suitable, lightly greased bread pan and cook for 50 - 60 minutes or until a skewer pushed in to the middle of the pan comes out dry.
    5. Remove from oven but leave in the pan for 10 - 15 minutes before turning out to cool.
    6. Slice and serve with butter or a dab of Greek-style yogurt when ready or reheat in your toaster anytime.
    Recipe Notes

    I found this recipe on a Russian food site. Mr. Google's translation left a lot to be desired so I had to improvise in places. This is a bread rather than a cake. If you want a moister result, just add another half cup of apple juice which will also give a sweeter loaf.
