    1. Preheat the oven to 190C
    2. Heat 4 tablespoons of olive oil in a large saucepan and sauté the onions and leek until translucent, about 2-3 minutes.
    3. Add the spinach and saute until the leaves have wilted and the liquid has cooked off. This will only take 7 - 8 minutes.
    4. Remove the pan from the heat and allow to cool. When cool enough to handle, finely chop the spinach and place in a large bowl.
    5. Lightly oil a large backing baking dish.
    6. Add dill and feta cheese to your spinach. Add salt and pepper to taste. Keep in mind that feta is already heavily salted. . Pour the eggs over and stir to combine well.
    7. Open up the filo pastry and place on a work surface. Cover the pastry sheets with the damp cloth each time you remove one as you prepare the pie as they will dry out very quickly in warm weather.
    8. Layer the filo sheet by sheet in the pan, allowing the edges to hang over the sides of the pan, brushing each layer generously with olive oil.
    9. Put the spinach and feta mixture in and press down gently to smooth the filling. Fold in the pastry draping over the edges.
    10. Repeat layering with the remaining filo, oiling each sheet generously.
    11. Using a sharp knife, score the upper layers of pastry into the size pieces you want to serve when the spanakopita is cooked. take care to NOT cut through the bottom layers of pastry!
    12. Cook in the centre of your oven for approximately 40-45 minutes or until your spanakopita is golden brown.
    13. Allow to cool and then cut into serving portions. Serve either just warm or at room temperature.
    Recipe Notes

    If your filling appears to be too 'wet', use two or three UN-OILED  sheets of pastry as a layer in the middle of the filling. They will absorb the excess liquid without affecting the end result.
