    Instructions
    1. Drain the olives and fresh mozzarella pearls while you cut cherry tomatoes and olives in half.
    2. Place the tomatoes and olives in a bowl, cut the mozzarella pearls in half and add to the bowl.
    3. Wash basil and spin dry in salad spinner or dry with paper towels, then chop coarsely.
    4. Mix chopped basil into vinaigrette dressing, then gently combine with the salad mixture. Season to taste with fresh ground black pepper and serve immediately.
    Recipe Notes

    If you prefer a nice crunchy salad, add capsicum (bell pepper) and Lebanese cucumber. As an extra benefit, both are very high in nutrition and are fat free!
