    Ingredients
    • 2 - 3 tbsp olive oil extra virgin for flavour
    • 4 cloves garlic crushed (fresh is best)
    • 1 tsp rosemary thyme or lavender can be substituted
    • 2 large limes lemon can be substituted
    • 1 kg potatoes cut to largish wedges with skin on
    • 1/2 tsp Sea Salt

    Instructions
    1. Select a large skillet and warm to a moderate heat. Add olive oil.
    2. Use scissors to roughly cut the rosemary sprigs adding directly to pan.
    3. Add garlic and stir for a couple of minutes to infuse flavours.
    4. Increase heat to medium high and add potatoes continuing to stir until potatoes start to brown.
    5. Reduce heat to medium and cover continuing to cook for about 10 mins until you can fork them easily. Remember to give them an occasional stir.
    6. Return heat to medium high and add the salt and the juice of 1 1/2 limes tossing the potatoes so that they are covered in the salt and juice.
    7. Cover again for about 2 minutes while the juice caramelises.
    8. Serve with remaining lime and enjoy the compliments!

    Recipe Notes

    This is a real crowd-pleaser.  The use of lime rather than the more traditional lemon definitely appeals to kids. Adjust quantities and lime/or lemon juice to suit.

    Don't be tempted to peel the potatoes as they are essential to the end result!

    This is a very forgiving recipe so feel free to experiment.
